Pasta al Limone

- 1 lb spaghetti
- 4 tablespoons butter
- 1 cup Parmesan cheese, grated
- 1 cup Pecorino cheese, grated
- Juice and zest of 2 lemons
Instructions
- Cook the Pasta
Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente. Reserve about 1/4 cup of pasta water before draining. - Prepare the Sauce
While the pasta cooks, melt the butter over medium-low heat in a large pan. Add the lemon juice and stir to combine. - Combine Pasta and Sauce
Once the pasta is cooked, add it directly into the pan with the melted butter and lemon juice. Add 1/2 cup of Parmesan and Pecorino cheese. Stir to combine, adding pasta water a little at a time (about 1/4 cup) to help create a smooth, creamy sauce. - Adjust the Flavor
Taste the pasta and adjust the seasoning with more cheese, butter, lemon juice, or pasta water if needed. The key is to trust your instincts—adjust the flavors to your liking. - Serve
Once the pasta is well-coated and the sauce has reached your desired consistency, transfer it to a serving dish. Top with extra Pecorino cheese and lemon zest. Serve and enjoy!
