Winter Citrus Salad
Ingredients

- 1 head Castelfranco lettuce
- 3 leaves radicchio, thinly sliced
- 1/2 fennel, thinly sliced on a mandoline
- 1 orange
- 1 grapefruit
- Small handful of mint leaves
- Juice from orange
- Juice from grapefruit
- 1 tablespoon white wine vinegar
- 3 tablespoons olive oil
- Pinch of Aleppo pepper
- Maldon salt, to taste
Instructions
- Prepare the Vegetables
Place the Castelfranco lettuce in a serving bowl. Add the sliced radicchio and fennel. - Prepare the Citrus
Cut both ends off the orange and grapefruit. Stand the citrus on one of the flat ends, then use a sharp knife to slice away the skin, removing any white pith. Cut between the membranes to segment the orange and grapefruit, and add the segments to the serving bowl. Set aside the citrus membrane for the dressing. - Make the Dressing
In a separate bowl, squeeze all the juice from the leftover citrus membrane. Add 1 tablespoon white wine vinegar, 3 tablespoons olive oil, a pinch of Aleppo pepper, and Maldon salt. Whisk with a fork to combine. - Toss the Salad
Pour the dressing over the salad and toss everything together. - Garnish and Serve
Top the salad with fresh mint leaves and a little more Aleppo pepper. Enjoy!
