Veggie Sandwich

Ingredients

2 slices of wholewheat bread
Hummus
1 Carrot, peeled and shredded
1 Cucumber, peeled and thinly sliced on a mandolin
1/2 tomato, half-moon slices
1/2 avocado, sliced
1/2 red onion, thin half-moon slices
Handful of fresh sprouts

Instructions

Toast the bread in the toaster.

Cut up and prep all your ingredients.

Start by generously spreading the toast with hummus. Follow by placing the ingredients on one slice of toast in the following order; shredded carrots, cucumber, tomato, avocado, red onion, and sprouts. Finally spread more hummus on the other piece of toast, place on top of the veggies, cut in half, and enjoy!
