1 zucchini, cut into 1/2 inch rounds
1 summer squash, cut into 1/2 inch rounds
1 red onion, cut into large chunks
1/2 lb mushrooms
1/2 lb cherry tomatoes
2 peppers, cut into chunks
You can use any vegetables you have on hand, kebabs are very flexible and forgiving.
Using bamboo skewers, carefully assemble your vegetables onto the skewers. Brush the kebabs with olive oil, then top both sides of the kebabs with salt, pepper, and smoked paprika.
Using a grill pan or on your bbq add the kebabs and grill until tender, about 5 minutes on each side. Remove the skewers and place them on a serving dish. Tastes great alongside the roasted red pepper dip.
