Vegetarian Breakfast Sandwich
Ingredients
2 slices of sourdough bread
1 Beyond beef sausage, butterflied
1 large egg
Avocado, sliced
Olive Oil
Salt and pepper
Hot sauce for serving
Instructions
First, toast the bread slices in the toaster.
On medium heat add the olive oil to a small pan once the oil is hot, cook the sausage slices for 4 minutes on one side and flip to cook for 3 more minutes. Set aside.
In the same pan, wipe clean and turn the heat up to medium-high. Add a little olive oil; once the oil is hot, crack the egg into the pan and season with salt and pepper. When the outside is crispy and cooked, tilt the pan slightly, and using a spoon, spoon the hot oil onto the top of the egg. The heat from the oil will cook the yellow and the leftover white that’s not quite cooked to your liking. Set aside.
Assemble your sandwich: place the beyond meat sausage first followed by the egg and then the avocado. Top with hot sauce and enjoy.
