Tzatziki

Ingredients

1 cup Greek yogurt (you can absolutely use coconut yogurt here)
1 small Persian cucumber, with the skin
1 garlic clove, minced
1/2 lemon, juiced
Salt to taste
Handful of fresh chopped dill, mint, and parsley

Instructions

Using a box grater, grate the cucumber.
It is always best to squeeze the water out of the cucumber so the tzatziki stays nice and creamy. Using your hands, squeeze the grated cucumber over the sink; you can do this in paper towels if you prefer.
In a bowl, add the yogurt, grated cucumber, minced garlic, juice from 1/2 lemon, and a pinch of salt and the chopped dill, mint and parsley.
Combine and taste. Adjust seasoning as needed. Top with a handful more of fresh herbs.
