Tzatziki
- 1 cup Greek yogurt (or coconut yogurt, if preferred)
- 1 small Persian cucumber, with the skin
- 1 garlic clove, minced
- 1/2 lemon, juiced
- Salt, to taste
- Handful of fresh chopped dill, mint, and parsley
- Prepare the Cucumber
Using a box grater, grate the cucumber. Squeeze the excess water out of the grated cucumber to keep the tzatziki creamy. You can do this by using your hands over the sink or wrapping the cucumber in paper towels for convenience.
- Combine the Ingredients
In a bowl, combine the yogurt, grated cucumber, minced garlic, juice from 1/2 lemon, a pinch of salt, and the chopped dill, mint, and parsley.
- Taste and Adjust
Mix everything together and taste. Adjust seasoning as needed. Top with a handful more fresh herbs.
