Toasty, Smoky, Garlicky, Salty Breadcrumbs

Ingredients

Scale
  • 1/2 loaf sourdough or other rustic bread
  • 1 stick of butter
  • 3 anchovies
  • 3 cloves of garlic, minced
  • Salt, to taste

Instructions

  1. Prepare the Bread
Preheat the oven to 200°F (95°C). Slice the bread into 1/2-inch slices and place them on a baking sheet. Bake for 1 to 1.5 hours, or until the bread is completely dried out. Once cooled, run the bread through a food processor with the fine shredding blade to make fine breadcrumbs. Set aside.
  2. Brown the Butter
Place the stick of butter in a large frying pan over medium-high heat. The butter will melt and begin to foam. Swirl the pan occasionally for even cooking. Continue heating until the butter solids turn golden brown and the butter smells nutty, about 5-8 minutes.
  3. Prepare the Breadcrumbs
Remove the browned butter from the heat and immediately add the anchovies. Use a wooden spoon to break down the anchovies until they dissolve. Add the minced garlic and season with salt to taste.
  4. Toast the Breadcrumbs
Add the breadcrumbs to the butter mixture in the pan and return to medium heat. Toast the breadcrumbs until golden, toasty, and dried out.
  5. Cool and Store
Remove the breadcrumbs from the pan and spread them out on a large plate or baking sheet to cool. Once completely cooled, store in an airtight jar in the fridge.
  6. These toasty, smoky, garlicky, salty breadcrumbs are perfect on pastas, salads, roasted veggies, or anything else you like! Enjoy!
