Superfood Seeded Granola
Ingredients
3 cups gluten- free oats
1 cup shredded coconut
3/4 cup sunflower seeds
3/4 cup pumpkin seeds
1/2 hemp seeds
1 teaspoon cinnamon
1/2 teaspoon cardamom
1/2 cup maple syrup
1/2 cup olive oil
1 cup goji berries
Salt
Instructions
Heat the oven to 300 degrees.
In a large bowl combine oats, shredded coconut, sunflower seeds, pumpkin seeds, hemp seeds, cinnamon, cardamom and salt. Set aside.
In a small saucepan over medium heat, heat the olive oil and maple syrup. Once it’s heated and beginning to bubble, remove from the heat and add to the dry ingredients, using a spatula or wooden spoon combine everything well. Transfer to a baking sheet and bake in the oven stirring every 10 minutes until golden brown and dry. This will take approximately 30 to 35 minutes. Remove the baking sheet from the oven and add the goji berries and more salt as needed. Allow to fully cool before transferring to glass jars to store.
