Simply Delicious Corn
Ingredients

- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 medium shallots, sliced thin
- 5 ears of corn, shucked and kernels removed from the cob
- 1/4 cup mixed herbs (basil, mint, chives, tarragon)
Instructions
- Prepare the Corn
Use a sharp serrated knife to remove the kernels from the cob. Set aside. - Cook the Shallots
In a heavy-bottomed pan, heat the butter and olive oil over medium heat. Once the butter has melted, add the sliced shallots. Cook for about 5 minutes, allowing the shallots to soften without browning. - Cook the Corn
Add the corn to the pan with the shallots. Season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until the corn is tender. - Add the Fresh Herbs
Stir in the fresh herbs and cook for another minute to allow the flavors to meld. - Serve
Serve immediately and enjoy!
