Red Onions with Currants & Sumac

Ingredients

1/2 red onion

1/4 cup of currants

1/3 cup olive oil

1 tablespoon sumac

Salt/pepper to taste

Instructions

Cut onion in half. Remove outer peel. Place onion cut side down and slice into very thin moon slices.

Place onion, currants, sumac, olive oil, salt & pepper in a bowl and let it marinate for 10 minutes.

You can store this in the fridge for up to a week in a glass jar with a lid.
