Ingredients
2 medium carrots, peeled and roughly chopped
1 shallot, peeled and roughly chopped
3-inch knob of fresh ginger peeled and roughly chopped
2 tablespoon sweet white miso
6 tablespoons rice wine vinegar
1 tablespoon honey or agave for vegan option
2 tablespoon toasted sesame seed oil
1/3 cup olive oil or another neutral oil
Salt and pepper
Directions
Place all the ingredients in a blender and puree everything together on high speed until well blended.
