Pronto Garbanzo Bean Salad

Ingredients

Scale

1 can of garbanzo beans
4 Persian cucumbers, peeled and quartered
2 scallions, thinly sliced
1/4 cup mint leaves, gently torn
3 tablespoons of feta (feel free to omit for vegan option)

Dressing

Juice from one lemon

3 tablespoons avocado oil

1 teaspoon honey (feel free to substitute for vegan option)

Salt and pepper

Instructions

Pour the garbanzo beans into a colander and rinse under cold water. Dry them well and place them in a serving bowl. Add the cucumbers and scallions to the serving bowl.

Place all your dressing ingredients in a small bowl and whisk together. Using about 3/4 of the dressing, add to the salad and mix gently to combine everything so the dressing is evenly distributed. Top the salad with the mint leaves and feta, drizzle the remaining dressing on top and finish with a little Maldon sea salt, and boom…
