Herby Spring Salad

Ingredients

4 heads of little gem lettuce
1 cup English peas, shelled
1 cup snap peas, cut in half
1 bunch of radishes, sliced
Handful mint leaves

DRESSING

1/4 cup yogurt
1/2 shallot, minced
1 tablespoon chives
1 tablespoon parsley
3 tablespoons white wine vinegar
1/2 lemon, juiced
1/2 cup olive oil
Salt and pepper

Instructions

Add the salad ingredients to a bowl.
If you don’t like the taste of English peas raw you can add them to a small pot of salted water for 30 seconds and place them straight into an ice bath. Once cooled add them to a salad.
I always add them raw. Who has the time or energy for this step mid-week.

Add the yogurt, shallot, herbs vinegar, and lemon juice to a bowl. Mix everything together. Gradually add the olive oil to the dish and whisk to combine. Season with salt and pepper.
Combine the dressing with the salad and enjoy.
You should have extra dressing left to enjoy in the coming days.
