Herby Cucumber Radish Salad
Ingredients

- 5 cucumbers
- 1 bunch radishes
- 3 spring onions
- Handful basil
- Handful mint
- Handful dill
Dressing:
- 1 clove garlic, minced
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon Aleppo pepper
- 3 tablespoons Champagne vinegar
- 1/2 cup good olive oil
- Salt and pepper to taste
Instructions
- Prepare the Vegetables
Using the side of a big knife, carefully smash down the cucumbers to break them up. Cut them into bite-sized pieces and place in a serving bowl. Roughly cut the radishes and add them to the bowl. Slice the spring onions thinly on the bias and add them to the bowl. - Chop the Herbs
Roughly chop the basil, mint, and dill, and add to the bowl with the vegetables. - Make the Dressing
In a small bowl, whisk together the minced garlic, Dijon mustard, Aleppo pepper, Champagne vinegar, olive oil, and a pinch of salt and pepper. Taste and adjust seasoning if necessary. - Combine
Pour the dressing over the prepared vegetables and herbs. Toss gently to combine. - Serve
Serve immediately or refrigerate for 10-15 minutes to allow the flavors to marinate before serving. Enjoy!
