HERBY CUCUMBER SALAD

Herby Cucumber Radish Salad

Ingredients

Scale
  • 5 cucumbers
  • 1 bunch radishes
  • 3 spring onions
  • Handful basil
  • Handful mint
  • Handful dill

Dressing:

  • 1 clove garlic, minced
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon Aleppo pepper
  • 3 tablespoons Champagne vinegar
  • 1/2 cup good olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables
    Using the side of a big knife, carefully smash down the cucumbers to break them up. Cut them into bite-sized pieces and place in a serving bowl. Roughly cut the radishes and add them to the bowl. Slice the spring onions thinly on the bias and add them to the bowl.
  2. Chop the Herbs
    Roughly chop the basil, mint, and dill, and add to the bowl with the vegetables.
  3. Make the Dressing
    In a small bowl, whisk together the minced garlic, Dijon mustard, Aleppo pepper, Champagne vinegar, olive oil, and a pinch of salt and pepper. Taste and adjust seasoning if necessary.
  4. Combine
    Pour the dressing over the prepared vegetables and herbs. Toss gently to combine.
  5. Serve
    Serve immediately or refrigerate for 10-15 minutes to allow the flavors to marinate before serving. Enjoy!
