Heavenly Tarragon Salad Dressing

My friend Sunny turned me onto her go-to salad dressing, this is my take on it…..

Ingredients

  • 1 large shallot
  • 3 tablespoons sherry or red wine vinegar
  • 1 tbsp dijon mustard
  • 1/2 tbsp honey
  • 1/4 cup tarragon and chives
  • 1/2 to 3/4 cup olive oil
  • Salt and pepper

 

 

Instructions

  1. Prepare the Shallot Mixture
    Mince the shallot and place it in a jar with a lid. Add the vinegar and let the shallot sit for 5 minutes to soften and break down.

  2. Add the Other Ingredients
    While the shallot is soaking, mince the tarragon and chives. Add the mustard, honey, tarragon, chives, salt, and pepper to the jar with the shallot and vinegar mixture.

  3. Shake and Adjust
    Add the olive oil to the jar. Secure the lid tightly and shake well to combine. Taste the dressing and adjust with more salt or honey if needed.

  4. Adjust Consistency
    For a thicker dressing, use 1/2 cup olive oil. For a thinner consistency, use 3/4 cup olive oil.

  5. Serve and Enjoy
    Use immediately or store in the fridge for later use. Enjoy on salads or as a marinade!
