My friend Sunny turned me onto her go-to salad dressing, this is my take on it…..
1 large shallot
3 tablespoons sherry or red wine vinegar
1 tbsp dijon mustard
1/2 tbsp honey
1/4 cup tarragon and chives
1/2 to 3/4 cup olive oil
Salt and pepper
Take a jar with a lid. Mince your shallot and add it to the jar along with the vinegar.
Leave the shallot and vinegar to sit for 5 mins, this will soften and break down the shallots.
Meanwhile, mince the tarragon and chives. Add the mustard and honey, herbs, salt, and pepper to the jar.
Add the olive oil and put the lid on tight, shake well and enjoy. Taste and add more salt if needed.
If you like a thicker dressing use 1/2 cup of oil. If you want your dressing thinner then add 3/4 of a cup.
