CHOCOLATE CHILI

Ingredients

  • 6 tbsp olive oil
  • 1 onion, diced small (divided)
  • 4 cloves garlic, minced (divided)
  • 2 lbs dark ground turkey meat
  • 2 large carrots, peeled and ends removed, diced small
  • 1 green bell pepper, diced small
  • 1/2 jalapeño, seeds removed and very finely chopped (leave seeds for more heat)
  • 1 zucchini, diced small
  • 1 cup cremini mushrooms, diced small
  • 1 1/2 tbsp chili powder, divided
  • 1 tbsp cumin, divided
  • 2 sprigs thyme
  • 1 tsp Aleppo pepper
  • 1 tsp oregano
  • 1 tsp cayenne pepper (optional)
  • 2 (15 oz) cans chopped/diced tomatoes
  • 1 cup Guinness beer or any other dark beer
  • 1 cup veggie or chicken stock
  • 2 bay leaves
  • 3 tbsp cocoa powder
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • Salt, to taste
  • Pepper, to taste
  • Sour cream, for topping
  • Green onions, for topping

Instructions

  1. Preheat the Oven
    Preheat your oven to 275°F (135°C).
  2. Cook the Ground Turkey
    In a heavy-bottomed pan, heat 3 tablespoons of olive oil over medium heat. Once the oil is heated, add 1/4 of the diced onion and 1 minced garlic clove. Cook for 3 minutes until softened. Add the ground turkey and cook for 5 minutes, breaking it up into small pieces with a wooden spoon. Add 1/2 tablespoon of chili powder, 1/2 tablespoon of cumin, salt, and pepper. Continue cooking until the turkey is cooked through. Taste and adjust seasoning as needed. Remove from the pan and set aside in a bowl.
  3. Cook the Vegetables
    In the same pan, add the remaining 3 tablespoons of olive oil. Once heated, add the remaining onion and garlic. Cook for 3 minutes (be careful not to brown). Add the diced carrots and cook for 3-4 minutes, then add the green bell pepper and jalapeño. Cook for another 3-4 minutes, seasoning with salt. Add the zucchini, mushrooms, and thyme sprigs. Continue cooking for 5 minutes, adding more olive oil if needed.
  4. Season the Vegetables
    Add 1 tablespoon of chili powder, 1/2 tablespoon of cumin, 1 teaspoon of Aleppo pepper, 1 teaspoon of oregano, and 1 teaspoon of cayenne (if using). Cook for 10 minutes to let the flavors develop.
  5. Add the Liquids and Beans
    Stir in the 2 cans of diced tomatoes, 1 cup of Guinness, 1 cup of stock, and cocoa powder. Bring the mixture to a gentle boil. Drain the kidney and black beans and add them to the pot. Add the bay leaves.
  6. Combine Turkey and Cook in the Oven
    Add the cooked turkey mixture back into the pot. Stir everything together and season with more salt and pepper. Cover the pot with a tight-fitting lid and place in the oven. Cook for 1 1/2 hours.
  7. Serve
    Once done, remove from the oven. Serve the chili over rice (if desired) and top with sour cream, cheese, scallions, and/or avocado. Enjoy!
