Butter Lettuce Salad w/ Tarragon Dressing

- 1/2 cup pine nuts
- 2 heads butter lettuce
- 1 bunch radishes
- 1 cup sugar snap peas
Dressing
- Tarragon dressing
Instructions

Toast the Pine Nuts
Place the pine nuts in a small frying pan over medium to medium-low heat. Stir frequently to toast, being careful not to burn them. Once they’re golden and fragrant, remove from the heat and set aside to cool completely. -
Prepare the Salad
In a serving bowl, arrange the butter lettuce in larger pieces. Using a mandoline, slice the radishes very thin and add them to the bowl. Slice the snap peas on the diagonal into thin strips and add them as well. -
Toss and Serve
Drizzle your dressing over the salad and toss gently to combine. Top with the toasted pine nuts and enjoy!
