Black Beans
Ingredients
1 1/2 cup black beans
1 6 inch piece of kombu
1/2 onion
1 garlic clove
1 bay leaf
Instructions
To soak overnight
Rinse beans thoroughly in a strainer and place in a bowl. Completely cover the beans with water, ensuring there is an extra inch or two of water over the beans as they will absorb the water and swell.
Directions to cook the beans
After soaking the beans overnight; drain the water from the beans and rinse well.
In a medium pot, add beans, kombu, onion, garlic clove, a bay leaf, and add water; make sure the water is covering the beans by about an inch, heat over medium-high heat. Once the water is boiling cover with a tight-fitting lid and turn the heat down to low.
Check the beans periodically, they will take approximately an hour to an hour and a half to cook. When they are nice and soft season with salt and enjoy.
