A Winter Fruit Salad
- 1 head Castelfranco lettuce (or any butter lettuce)
- 6 leaves radicchio, thinly sliced
- 1 small fennel, thinly sliced
- 1 orange, peeled and segmented
- 1 grapefruit, peeled and segmented
- 1 persimmon, thinly sliced
- 1/2 cup pomegranate seeds
- Small handful of fresh mint, chopped
- Juice from the leftover orange and grapefruit segments
- A good drizzle of olive oil
- Maldon salt, to taste
- Fresh cracked pepper, to taste
- Combine the Ingredients
Place all the ingredients (lettuce, radicchio, fennel, citrus segments, persimmon, pomegranate seeds, and mint) in a bowl and gently combine.
- Add the Dressing
Squeeze the juice from the leftover parts of the orange and grapefruit into the bowl. Drizzle with olive oil, and top with Maldon salt and fresh cracked pepper.
- Toss and Serve
Combine everything together, then enjoy!
