Tuna Lettuce Wraps



6 oz can of tuna, oil-packed
2 teaspoon capers chopped
2 teaspoon cornichons, finely chopped
1/4 red onion, grated
2 teaspoon lemon juice
1 teaspoon cilantro, chopped
6 tablespoons vegenaise or mayonnaise
2 teaspoon Dijon mustard
Salt and pepper to taste
6 Butter lettuce leaves
Cucumber, cut into thin strips on the bias
Spicy mustard, to taste
Cilantro to top (optional) 


Drain the tuna well and place in a medium-sized bowl.
Add the rest of the ingredients, then use a fork to combine.
Stack two butter lettuce leaves and set aside. Repeat three times.
Place 3 cucumbers slices onto the lettuce, a smear of spicy mustard, then a large spoonful of tuna salad. Top with a few cilantro leaves. Repeat twice more.
Enjoy with hot sauce.
