Superfood Seeded Granola

  • 3 cups gluten-free oats
  • 1 cup shredded coconut
  • 3/4 cup sunflower seeds
  • 3/4 cup pumpkin seeds
  • 1/2 cup hemp seeds
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 cup maple syrup
  • 1/2 cup olive oil
  • 1 cup goji berries
  • Salt, to taste

Instructions

  1. Preheat the Oven
    Preheat your oven to 300°F (150°C).
  2. Prepare the Dry Ingredients
    In a large bowl, combine the gluten-free oats, shredded coconut, sunflower seeds, pumpkin seeds, hemp seeds, cinnamon, cardamom, and salt. Set aside.
  3. Prepare the Wet Ingredients
    In a small saucepan over medium heat, warm the olive oil and maple syrup. Once it begins to bubble, remove the saucepan from the heat.
  4. Combine and Bake
    Pour the heated oil and syrup mixture into the dry ingredients. Use a spatula or wooden spoon to thoroughly combine everything.
    Transfer the mixture to a baking sheet and spread it out evenly. Bake in the preheated oven, stirring every 10 minutes, until golden brown and dry—approximately 30 to 35 minutes.
  5. Add Goji Berries and Cool
    Remove the baking sheet from the oven and stir in the goji berries. Add more salt if needed. Allow the granola to fully cool before transferring it to glass jars for storage.
