1 tablespoon butter
1 tablespoon olive oil
2 medium shallots, sliced thin
5 ears of corn, shucked and cut of the cob
1/4 cup mixed herbs, like basil, mint, chives, tarragon
Remove the corn of the cob with a sharp serrated knife and set aside.
Heat a heavy bottom pan oven medium heat, add the butter and olive oil. When the butter has melted add the shallots and cook for 5 minutes allowing the shallots to soften but not brown. Add the corn and cook for about 10 minutes, season with salt and pepper. Add the fresh herbs and serve immediately.
