Simply Delicious Corn

Ingredients

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 medium shallots, sliced thin
  • 5 ears of corn, shucked and kernels removed from the cob
  • 1/4 cup mixed herbs (basil, mint, chives, tarragon)

Instructions

  1. Prepare the Corn
    Use a sharp serrated knife to remove the kernels from the cob. Set aside.
  2. Cook the Shallots
    In a heavy-bottomed pan, heat the butter and olive oil over medium heat. Once the butter has melted, add the sliced shallots. Cook for about 5 minutes, allowing the shallots to soften without browning.
  3. Cook the Corn
    Add the corn to the pan with the shallots. Season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until the corn is tender.
  4. Add the Fresh Herbs
    Stir in the fresh herbs and cook for another minute to allow the flavors to meld.
  5. Serve
    Serve immediately and enjoy!
