NOURISHING CRUNCHY SALAD

Ingredients

1/2 red onion, diced small

4 carrots, peeled and cut into quarters and diced small

4 cucumbers, peeled, cut into quarters and diced small

1/2 cup feta, broken up

1 bunch radishes, diced small

1 head romaine lettuce, chopped small

1/2 cup garbanzo beans, rinsed and dried

 

Dressing

1/3 plain greek yogurt

3 tablespoons white wine vinegar

4 tablespoon olive oil 

1 pinch sea salt

1 pinch ground pepper

 

Directions

Combine everything in a bowl. 

Place all the dressing ingredients in a jar with a tight filling lid and shake well (it can be stored in the fridge for up to a week).

Serve dressing alongside salad so that individuals may dress it themselves.
