Juice from one lemon
2 tablespoons unseasoned rice vinegar
1 teaspoon agave
1/3 cup olive oil
Salt and pepper
Combine shallot, lemon juice, and unseasoned rice vinegar in a jar season with salt and black pepper. Let sit for 10 minutes. Add the olive oil and cover with a tight-fitting lid. Shake well to combine.
