4 fillets of halibut (about 6 oz each )
1 leek, cleaned and sliced thin
1 handful asparagus, cut into 1-inch pieces
3 garlic cloves, thinly sliced,
1 handful of cherry tomatoes, cut into quarters
1/4 cup white wine
4 teaspoons olive oil
Salt and pepper
Preheat oven to 400 degrees.
When assembling this dish I place some vegetables beneath and on top of the fish. Take a handful of the leeks and place on the parchment paper. Place the fish on top, sprinkle some of the garlic on the fish. Add remaining leeks, asparagus, and tomatoes. Add a tablespoon of white wine, a teaspoon of olive oil, and salt and pepper. Fold up the parchment paper (you can youtube a video if you are unsure of how to do it) repeat with the 3 fillets using the remaining ingredients so you end up with 4 parcels total.
Place them in the oven on a baking sheet for 12 to 15 minutes. Remove and let it sit for 5 minutes before opening. It’s beautiful to serve directly on the parchment paper.
