PROTEIN-PACKED GREEK SALAD

Ingredients

1 can garbanzo beans
3 persian cucumbers
1 cup cherry tomatoes
1/4 cup olives
1/4 cup peperonchini peppers
1/4 cup feta cheese
Handful of chopped dill
Handful of chopped mint
3 tablespoons white wine vinegar
3 tablespoons olive oil
Salt and pepper to taste

Instructions

Place garbanzo beans into a colander and rinse under cold water. Dry well and add to your serving bowl.

Cut off the ends of cucumbers and peel the skin using a vegetable peeler. Cut cucumbers in half lengthways and halve again into quarters. Dice into 1/4″ moon slices and add to the serving bowl.

Cut cherry tomatoes in half and roughly chop olives and pepperoncinis. Add them to the serving bowl.

Whisk white wine vinegar, olive oil in a small bowl, adding salt and pepper to taste. Then add dressing to the serving bowl and toss well to combine.

Add chopped dill and mint and combine, top with feta cheese, and a little more olive oil to finish. Add additional salt and pepper to taste, and enjoy!
