1lb spaghetti
4 tablespoons butter
1 cup parmesan
1 cup pecorino
Juice 2 lemons plus zest
Bring water to a boil and cook the pasta per the directions on the box.
Meanwhile over medium-low heat melt the butter and add the lemon juice to the pan.
Once the pasta is cooked but still al dente, add it directly into the pan with the butter and lemon juice. Add 1/2 cup of the parmesan and pecorino cheese. Give everything a stir. Add pasta water as needed (probably 1/4 cup) and stir everything to combine. You can add more cheese, butter, lemon juice, and pasta water as needed. This is a dish you need to trust yourself and how it feels, tastes and looks. Once you have the consistency you like add the pasta to your serving dish. Top with more pecorino and lemon zest and enjoy.
