Mahi Mahi with Mango Salsa

1lb Mahi Mahi
2 tablespoons olive oil, divided
Juice from 1/2 lime
Salt and pepper

Salsa

1/2 ripe mango, diced small
1 tomato, diced small
1/2 avocado, diced small
1/2 jalapeño, seeds removed and minced
Small handful of cilantro, chopped
1 lime
1 tablespoon olive oil
Salt and pepper

Instructions

I love this Staub fish dish it seriously makes fish perfectly. You can also use a cast-iron skillet. The key for fish is a nice hot pan and a cast iron does just that.

Marinate the Mahi Mahi with 1 tablespoon of olive oil, lime juice, salt, and pepper and set aside for 10 minutes.

To prepare the salsa; combine the mango, tomato, avocado, and jalapeño in a bowl. Add the cilantro, juice from one lime, olive oil, salt, and pepper. Combine everything well and set aside.

Heat the pan over high heat and add the olive oil. Once the pan and oil are hot, very carefully place the fish into the pan and season with salt and pepper. Do not touch or disturb the fish. After 5 minutes using a fish spatula carefully turn the fish over. Add some more salt and pepper and place the lid on the pan. Leave the fish for 2 or 3 more minutes. Once done, top with the salsa and serve.
