5 cucumbers
1 bunch radishes
3 spring onions
Handful Basil
Handful mint
Handful dill
Dressing
1 clove of garlic, minced
1/2 teaspoon Dijon mustard
1/2 teaspoon Aleppo pepper
3 tablespoons Champagne vinegar
1/2 cup good olive oil
Salt and pepper to taste
Using the side of a big knife carefully smash down the cucumbers to break them up. Cut into bite-size pieces and place in a serving bowl. Roughly cut the radishes, and add them to the bowl. Slice your spring onions thinly on the bias and add to the bowl.
Meanwhile, in a separate bowl make your dressing. To make the dressing add the garlic, mustard, and champagne vinegar, Aleppo pepper to a bowl, very gradually add the olive oil, and whisk so it emulsifies—season with salt.
Roughly cut or tear your herbs. Combine everything together. Top with Maldon salt and fresh cracked pepper. Leave everything to sit for 30 minutes before serving. Enjoy.
